Best Recipe for Day-After Hangover Tacos
Ingredients
- Oil, for oiling grill grates
- One 1-inch-thick boneless New York strip steak
- Salt and pepper
- 2/3 cup guacamole
- 1/3 cup sour cream
- 4 heirloom tomatoes, chopped
- 2 jalapeno peppers, grilled and diced
- Pickled carrots, diced
- Pickled onions, diced
- 1 bunch chopped fresh cilantro
- 2 eggs
- 2 tablespoons butter
- 2 precooked chicken-apple sausages, sliced
- 8 corn tortillas, grilled
- 1 lime, cut into wedges
Instructions
- Prepare a grill or grill pan for medium-high heat. Lightly oil the grill grates.
- Sprinkle the steak with salt and pepper, and grill to the desired doneness, 4 to 5 minutes per side. Let rest 5 minutes.
- Stir together the guacamole and sour cream in a small bowl. Season to taste.
- Combine the tomatoes, jalapenos and some pickled carrots and pickled onions in a medium bowl, then fold in the cilantro.
- Scramble the eggs in melted butter in a nonstick medium skillet over medium heat. Season with salt and pepper.
- Heat the sliced sausages in a skillet.
- Thinly slice the steak. Top the tortillas with some avocado crema, then add the scrambled eggs, steak and sausage. Top with pico de gallo and serve immediately.
