Ingredients

  • Oil, for oiling grill grates
  • One 1-inch-thick boneless New York strip steak
  • Salt and pepper
  • 2/3 cup guacamole
  • 1/3 cup sour cream
  • 4 heirloom tomatoes, chopped
  • 2 jalapeno peppers, grilled and diced
  • Pickled carrots, diced
  • Pickled onions, diced
  • 1 bunch chopped fresh cilantro
  • 2 eggs
  • 2 tablespoons butter
  • 2 precooked chicken-apple sausages, sliced
  • 8 corn tortillas, grilled
  • 1 lime, cut into wedges

Instructions

  1. Prepare a grill or grill pan for medium-high heat. Lightly oil the grill grates.
  2. Sprinkle the steak with salt and pepper, and grill to the desired doneness, 4 to 5 minutes per side. Let rest 5 minutes.
  3. Stir together the guacamole and sour cream in a small bowl. Season to taste.
  4. Combine the tomatoes, jalapenos and some pickled carrots and pickled onions in a medium bowl, then fold in the cilantro.
  5. Scramble the eggs in melted butter in a nonstick medium skillet over medium heat. Season with salt and pepper.
  6. Heat the sliced sausages in a skillet.
  7. Thinly slice the steak. Top the tortillas with some avocado crema, then add the scrambled eggs, steak and sausage. Top with pico de gallo and serve immediately.
