Ingredients

  • 2 pounds ground pork
  • 2 large onions, chopped
  • 1/2 red bell pepper, chopped
  • salt to taste
  • 8 cups cold water
  • 1 1/2 cups masa harina (corn flour)
  • 1 cup strong brewed coffee
  • 1/3 cup chili powder
  • 3 tablespoons ground cumin
  • 2 tablespoons garlic powder
  • 2 tablespoons salt, or to taste
  • 1 tablespoon oregano
  • 1 tablespoon ground black pepper
  • 1 (32 ounce) can chili beans
  • 1 (32 ounce) can tomato juice
  • 2 (8 ounce) cans tomato sauce
  • 1 pound smoked sausage, diced
  • 1/2 cup brown sugar

Instructions

  1. Heat a large pot over medium heat; cook and stir ground pork, onions, and bell pepper until pork is no longer pink, 5 to 7 minutes. Season with salt to taste and drain.
  2. Combine water, masa harina, coffee, chili powder, cumin, garlic powder, salt, oregano, and black pepper in a large bowl; stir until smooth. Pour coffee mixture into ground pork mixture and add tomato juice and tomato sauce; bring to a boil. Stir in smoked sausage and brown sugar. Cover and reduce heat to medium-low. Simmer for 4 hours, stirring often.
