Ingredients

  • 3 tablespoons olive oil, divided
  • 1/4 cup diced onion
  • 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 (5.4 ounce) package Knorr® Fiesta Sides™ - Mexican Rice
  • 1 (15 ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup pico de gallo

Instructions

  1. Heat 2 tablespoon olive oil over medium high heat; add onions and cook and stir until they start to soften, 3 or 4 minutes.
  2. Season diced chicken with 1 teaspoon of kosher salt. Add chicken to pan and cook over medium high heat until chicken has started to brown, about 5 minutes. Remove chicken from pan.
  3. Use remaining 1 tablespoon olive oil to prepare Knorr(R) rice sides(TM) as directed on package. Stir in cooked chicken, black beans .and Monterrey jack cheese; heat through. Top with fresh pico de gallo.
